Easy Campfire Veggie Omelette Quesadillas

This easy recipe combines the best of a quesadilla and an omelette, using just a few ingredients. Perfect for a quick and satisfying campfire meal!

Ingredients:

  • 1 medium egg
  • 1 handful of grated cheese (mozzarella or cheddar are great options)
  • 1 mini tortilla wrap

What You’ll Need:

  • Pan
  • Spatula
  • Knife

Method:

  1. Heat a small frying pan and crack the egg directly into it.
  2. Immediately add the grated cheese, mixing it with the egg using a spatula.
  3. Swirl the pan to evenly coat the bottom with the egg and cheese mixture.
  4. Before the egg fully sets, place a mini tortilla wrap on top and press down gently to adhere it to the omelette.
  5. Cook for another minute or two until the egg and cheese turn a golden, delicious colour. Flip the whole thing over to crisp up the tortilla, or leave it softer if you prefer to roll it up for easy eating.
  6. Slice into wedges and serve with your favourite veggies, or dip into salsa or chilli for an extra kick.
