Breakfast Burritos: A Delicious and Easy Camping Recipe to Kickstart Your Day

Camping mornings can be magical, with the crisp air, the gentle rustle of leaves, and the promise of a new adventure. But nothing makes waking up in the great outdoors even better than a hearty, homemade breakfast. Enter the camping breakfast burrito: a flavourful, customisable, and easy-to-make meal that will give you the energy you need to tackle your day. Here’s everything you need to know to whip up these delicious burritos over a campfire or portable stove.


Ingredients:

Tortillas: 6-8 large tortillas (flour or whole wheat, depending on your preference)

Eggs: 6 large eggs

Hash Browns: As many as you would like

Onion: 1 small onion, finely chopped

Cheese: 1 cup shredded cheddar or your favourite cheese

Cooked Sausage or Bacon: 1 cup, crumbled or chopped (optional for added protein)

Olive Oil or Butter: For cooking

Salt and Pepper: To taste

Optional Toppings: avocado, hot sauce, ketchup, bbq

Directions:

  1. In a large skillet over medium heat, cook bacon and sausages, until they are cooked to your liking. Drain on a paper towel-lined plate and pour off half the fat. Add onions if you desire. 
  2. Cook hash browns according to package directions in bacon fat until golden brown. Season with salt and pepper. Remove from the pan and set aside.
  3. Beat the eggs in a bowl and pour them into the pan. Cook over medium heat, stirring gently until the eggs are scrambled and cooked through. 
  4. Lay out a tortilla and sprinkle a bit of cheese in the centre. Add a hashbrown, onion and even peppers if you want, the sausage and bacon and then egg mixture. Sprinkle a little more cheese on top and fold the sides of the tortilla inwards, then roll it up tightly from the bottom.
  5. Place the burritos seam-side down in the hot pan or on the grill. Cook until they are golden brown and the cheese is melted, about 2-3 minutes per side. If you’re using a campfire, wrap the burritos in aluminium foil and place them on the grate over the fire, turning occasionally.
  6. Once the burritos are crispy and the cheese is gooey, take them off the heat. Let them cool slightly before serving. Add optional toppings like avocado slices, or a drizzle of hot sauce (or any other sauces of your choosing) for extra flavour.
