Tortillas: 6-8 large tortillas (flour or whole wheat, depending on your preference)
Eggs: 6 large eggs
Hash Browns: As many as you would like

Cheese: 1 cup shredded cheddar or your favourite cheese
Cooked Sausage or Bacon: 1 cup, crumbled or chopped (optional for added protein)
Olive Oil or Butter: For cooking
Salt and Pepper: To taste

Directions:
- In a large skillet over medium heat, cook bacon and sausages, until they are cooked to your liking. Drain on a paper towel-lined plate and pour off half the fat. Add onions if you desire.
- Cook hash browns according to package directions in bacon fat until golden brown. Season with salt and pepper. Remove from the pan and set aside.
- Beat the eggs in a bowl and pour them into the pan. Cook over medium heat, stirring gently until the eggs are scrambled and cooked through.
- Lay out a tortilla and sprinkle a bit of cheese in the centre. Add a hashbrown, onion and even peppers if you want, the sausage and bacon and then egg mixture. Sprinkle a little more cheese on top and fold the sides of the tortilla inwards, then roll it up tightly from the bottom.
